We even reach for a second or even a third cup in a day when we are feeling extra creative or just need a boost to handle our business. But who’s to say that coffee is just for drinking? Or can’t even be enjoyed over, say, dinner? Today I am showing you how to throw together the most sinful coffee dry rub that pairs perfectly with steak. Simply cover the steaks in the coffee rub and allow to sit at room temperature for 15 minutes before grilling to your desired doneness (I personally prefer medium myself). The second I saw these purple sweet potatoes at my weekly Farmer’s Market run, I just knew I had to have them. What I would make of them, I wasn’t sure, but oh how I adored their royal coloring! Fast forward two days and ta-da, the light bulb went on. I thinly sliced the potatoes on my mandolin, chopped up some sage, and sprinkled some parmesan into a bowl. After 50 minutes {which felt like a lifetime, by the way}, the buzzer dinged, and our side dish was ready! I like to pair these with a simple grilled chicken breast, but would go amazingly with anything from beef to pork, or even served as an adorable holiday appetizer. Can’t find purple sweet potatoes?
