The second I saw these purple sweet potatoes at my weekly Farmer’s Market run, I just knew I had to have them. What I would make of them, I wasn’t sure, but oh how I adored their royal coloring! Fast forward two days and ta-da, the light bulb went on. I thinly sliced the potatoes on my mandolin, chopped up some sage, and sprinkled some parmesan into a bowl. After 50 minutes {which felt like a lifetime, by the way}, the buzzer dinged, and our side dish was ready! I like to pair these with a simple grilled chicken breast, but would go amazingly with anything from beef to pork, or even served as an adorable holiday appetizer. Can’t find purple sweet potatoes? Baked oatmeal is one of my favorite dishes to make on the weekends, especially after a morning workout or hike. It’s easy to make, super filling, and healthy to boot, which is important during the holiday season, since we all want to look our best in our party dresses. Cranberries are a very easy to find ingredient with the holidays upon us, and oranges are always a grocery staple. The rest of the ingredients you will most likely already have on hand. The best par of this dish in my opinion is the browned butter.   I will admit that even though the kitchen is my happy place, there are some nights that I just don’t have the energy to be able to put together a gourmet meal.
